AOC Saint-Chinian

Soils: Clay and limestone (Mourvèdre, Syrah, Carignan, Grenache), Sandstone (Syrah, Carignan, Mourvèdre) and Shist (Grenache, Syrah, Mourvèdre)
Grape varieties: Grenache: 31 %, Carignan: 33 %, Mourvèdre: 16 %, Syrah: 20 %
Harvest: By hand, in small crates with sorting
Harvest start date: September 30
Vinification: Traditional, with vatting times of 4 to 6 weeks.
Maturing: Concrete vats and barrels (for Syrah and Mourvèdre) on the lees.
Treatment of the wine: Not fined or filtered
Alcoholic strength: 13.5 % vol.
Packaging: 75 cl Bordeaux bottles

Tasting notes:

The aromas are very varied: cherries, pomegranates, peanuts, lime blossom and leather combine to form a typical, harmonious bouquet.
The wine is full-bodied and fresh on the palate, with great length and the same aromas, making this a great accompaniment to gourmet dishes.

Serving suggestions:

With its balance and freshness, this wine may be enjoyed with a wide range of foods such as Mediterranean and meat dishes, particularly lamb and veal. Try it with a “navarin” of lamb, for example.
This wine is at its best served at a temperature of around 18 °C. If served young, the wine should be aerated. Though very pleasant to drink when young, it will increasingly express the scents of the ‘garrigue’ as it matures.
