AOC Saint-Chinian


Soils: Clayey limestone (Mourvèdre, Syrah, Carignan, Grenache), Sandstone (Syrah) and Schist (Grenache) Grape varieties: Mourvèdre: 37 %, Syrah: 41 %, Grenache: 12 %, Carignan: 10 %This very rich wine should not be served too warm. It is at its best at approximately 18°C. It is a delightful accompaniment to quite strongly-flavoured dishes cooked in sauce, game, red meat and many other dishes. If opened now, it should be decanted to achieve its full expression. However, its richness means that it may be laid down for many years.

Harvest: By hand, in crates, with sorting Harvest start date: 23 September 2001 Vinification: Traditional, with 4 to 6 weeks' fermentation time. Malolactic fermentation in the barrel Maturing: In the barrel on fine lees Treatment of the wine: Not fined, not filtered Alcoholic strength: 14.5 % vol. Packaging: 75 cl Bordeaux bottles


Tasting notes: Aromas typical of the ‘garrigue’ are the first to emerge in the glass, combined with aromas of roasting and red meat. Concentrated, powerful and smooth on the palate, with a freshness characteristic of the vintage. We find the same aromas as those discovered on the nose, along with notes of blackberry liqueur. There is a lovely freshness on the finish, with persistent dark berry flavours.
