AOC Saint-Chinian


Soils: Clay-and limestone (Mourvèdre, Syrah, Carignan, Grenache), Sandstone (Syrah, Mourvèdre) and Schist (Grenache, Syrah) Grape varieties: Mourvèdre: 45 %, Syrah: 41 %, Grenache: 8 %, Carignan: 6 % Harvest: By hand, in small crates, with sorting. Harvest start date: September 20 Vinification: Traditional with 5 to 6 weeks’ vatting time. Malolactic fermentation in barrels Maturing: Barrels (for Syrah and Mourvèdre), matured on the lees Treatments: Not fined or filtered Alcohol content: 14 % vol. Packaging: 75 cl Bordeaux bottles

Tasting notes:

This wine has real aromatic density, with dominant red and black berry aromas (blackberries, bilberries) and hints of grilled red meat and thyme. The bouquet is enhanced on the palate by a rich, fresh structure that makes the wine powerful and very pleasing to drink, even when young. Time will obviously add extra finesse and complexity to a wine that already has plenty of both.


Tasting suggestions:

The wine’s strength and freshness mean that it can accompany a wide range of dishes. Meat, particularly game, is ideal, but it may also be served with stronger-tasting and spicy dishes.
