Soil: Clayey limestone Grape variety: Sauvignon Harvest: By hand, in crates, with sorting Harvest start date: 26 and 27 August 2009 Vinification: Slow pressing - Racking 50 % fermented in new barrels and 50 % in barrels used for 2 wines Maturing: In barrels, on the lees with stirring Alcoholic strength: 13 % vol. Packaging: 75 cl Bordeaux bottles



Tasting notes: Initial preserved citrus fruit aromas, especially orange peel, followed by hints of aniseed against a smoky background. These very mellow aromas convey a sensation of softness. Acidulous notes are added to the bouquet on the palate, where the wine remains fresh despite its considerable richness. The finish is very long and fleshy.


Serving suggestions: This rich wine may be served with a wide range of dishes, such as oily fish, sauces and white meats, and also goes very well with cheese or foie gras. Or why not try it with Asian dishes?

Do not serve this wine too cold, and give it plenty of aeration.
