AOC Saint-Chinian


Soils: Clayey limestone (Mourvèdre, Syrah, Carignan, Grenache), Sandstone (Mourvèdre, Syrah, Carignan) and Schist (Grenache) Grape varieties: Grenache: 33 %, Carignan: 37 %, Syrah: 14 %, Mourvèdre: 16% Harvest: By hand, in crates, with sorting Harvest start date: 19 September 2005 Vinification: Traditional, with 4 to 6 weeks' fermentation time. Maturing: Concrete tanks, and barrels (for syrah and mourvèdre) on the lees. Treatment of the wine: Not fined, not filtered Alcoholic strength: 13.5 % vol. Packaging: 75 cl Bordeaux bottles and Magnums (1.5 l)



Tasting notes: On the nose this wine offers a whole range of aromas dominated by spices such as curry, Sichuan pepper and cinnamon, but also of cocoa, dark berries and already a typical hint of ‘garrigue’ scents (which generally become stronger as the wine matures). Smooth and fresh, with ‘garrigue’ flavours, leading to a soft, velvety finish.


Tasting suggestions: This wine may be enjoyed now for its spicy, fruity aromas. With 5 to 8 years’ ageing, it will gain in complexity and elegance, developing aromas typical of the ‘garrigue’ that surrounds the vineyards. It is at its best at a temperature of around 16 to 18 °C. This “Classic” wine’s fullness and freshness make it an ideal accompaniment to a wide range of foods, especially grilled meats (lamb in particular) and Mediterranean dishes.
