Vin de Pays d’Oc
Soil: Clayey limestone Grape variety: Sauvignon Harvest: By hand, in crates, with sorting Harvest date: 9 - 10 September Vinification: Slow pressing - Racking - Fermentation in the tank Maturing: On the lees, in stainless steel tanks Alcoholic strength: 13.0 % vol. Packaging: 75 cl Bordeaux bottles
Tasting notes: Light white blossom aromas appear first of all, followed by lemon and preserved orange with hints of smoke. On the palate these are joined by acidulous aromas. The wine is full and fresh with a long finish and plenty of fleshiness. This vintage is rather special as malolactic fermentation took place on part of the wine. We also thought that it found a good balance quite quickly; we therefore bottled the wine earlier than usual, while it still had its primary aromas, which are always more to the fore at this stage.
Serving suggestions: This Classic White makes an ideal aperitif and also goes well with shellfish or grilled fish. You could also try something more original with tajines or woks.
