Malolactic fermentation in the barrel Maturing: In the barrel on fine lees Treatment of the wine: Not fined, not filtered Alcoholic strength: 14 % vol. Packaging: 75 cl Bordeaux bottles

Tasting notes: The wine’s richness may be seen immediately in its intense crimson colour. Empyreumatic aromas dominate. The bouquet is very complex, with almond, thyme, blackberry and spice aromas. This aromatic richness is supported by a dense, well-rounded structure that suggests that, though it may be enjoyed now, the wine may be laid down for a number of years.

Serving suggestions: If opened young, this very rich wine should not be served too warm. 18 °C is ideal. It has the strength to served alongside highly flavoured or spicy foods, such as meat cooked in sauce, game and red meats.

Tasting suggestions: This wine should be laid down and will reach its full expression between 5 and 15 years, but its rounded structure means that it can be enjoyed younger, but should be decanted beforehand. It should be served at between 17 and 19 °C and, considering its strength, will go beautifully with all kinds of dishes, particularly meats in sauce, such as game (hare, deer, etc...).

Tasting notes: The very dark colour is a sign of great richness. The nose offers a well-balanced palette of ripe fruit aromas (blackberries, blackcurrants, figs...), hints of smoke and scents of the "garrigue", giving the wine elegance and complexity. Its rich, smooth structure gives it a lovely feel on the palate and a good, long finish. Good potential for laying down.
