Tasting notes:

The first nose reveals aromas of black fruit, especially blackberry. Then the complex bouquet reveals notes of violet and Sichuan pepper in particular. On the palate, there is black cherry and toasted notes. The attack is unctuous and is extended by a round structure with volume and a lot of freshness that give it a nice length.

Tasting suggestions:

The complexity and elegance of this wine allow it to be paired with very tasty dishes. It will go well with a duck breast or a stew (beef or game) but also roasted poultry. Do not hesitate to taste it with some cheeses matured like a Munster, it can reserve nice surprises. The serving temperature should be between 17 and 18°C to let the wine express the complexity of its aromas and velvety texture.

Tasting notes:

The initial nose reveals dark fruit, particularly blackberry, aromas. The complex bouquet then opens out onto violet and Sichuan pepper notes.

Tasting suggestions:

This complex, elegant wine may be served with highly flavourful dishes, such as duck breast fillet, beef or game stew, or roast poultry. Or why not try it with certain mature cheeses, such as Munster? You may be pleasantly surprised.

Best served at between 17 and 18°C to allow the wine to fully express its complex aromas and velvety texture.

AOC Saint-Chinian

High Environmental Value (HVE) certified

and conversion to Organic farming

Soils: Clay and limestone (Mourvèdre, Syrah, Carignan, Grenache), Sandstone (Syrah, Carignan, Mourvèdre) and Schist (Grenache, Syrah, Mourvèdre) Grape varieties: Grenache: 34 %, Carignan: 22 %, Mourvèdre: 20 %, Syrah: 24 % Harvest: By hand, in small crates with sorting Harvest date: September 17 to October 1st Vinification: Traditional, with 4 to 6-week vatting times. Maturing: Concrete tanks and barrels (for Syrah and Mourvèdre) on the lees. Treatment of the wine: Not fined or filtered Alcoholic content: 13.5 % vol. Packaging: Bordeaux bottles 75 cl and 1.5 l

Tasting notes:

Notes of red fruits (cherry, strawberry) and violet are present on the nose, associated with aromas related to the garrigue of roasted and empyreumatic coffee.

On the palate, we find this bouquet with, in addition, aromas of cocoa. The attack is very round and continues with a very flexible structure.

Serving suggestions:

Given its structure, this wine will express itself on many dishes. Its typical aromatic character gives it of course a predilection for weddings to Mediterranean cuisine, but its potential is much broader.

For a perfect expression of this wine, a serving temperature of around 16 to 18 ° C will be ideal.
