AOC Saint-Chinian

Tasting notes: On the nose this wine offers a whole range of aromas dominated by spices such as curry, Sichuan pepper and cinnamon, but also of cocoa, dark berries and already a typical hint of ‘garrigue’ scents (which generally become stronger as the wine matures). Smooth and fresh, with ‘garrigue’ flavours, leading to a soft, velvety finish.


Tasting suggestions: This wine may be enjoyed now for its spicy, fruity aromas. With 5 to 8 years’ ageing, it will gain in complexity and elegance, developing aromas typical of the ‘garrigue’ that surrounds the vineyards. It is at its best at a temperature of around 16 to 18 °C. This “Classic” wine’s fullness and freshness make it an ideal accompaniment to a wide range of foods, especially grilled meats (lamb in particular) and Mediterranean dishes.

Tasting notes: On retrouve dans ce vin le caractère et la typicité habituelle de cette cuvée, aujourd’hui dans le registre des épices (curry, poivre…) des fruits noirs (mûre) et de la feuille de figuier en particulier. Le millésime 2004 lui confère une belle matière et surtout une grande fraîcheur gage d’un bon potentiel d’évolution même si dès maintenant il se révèle bien plaisant.


Tasting suggestions: Ce vin peut se boire avec plaisir dès à présent sur ses notes fruitées. Le vieillissement (5 à 8 ans) lui confèrera complexité et élégance en développant des arômes typiques de l’environnement des vignes avec des odeurs de garrigue. Il s’exprimera au mieux à une température voisine de 18 °C. La rondeur et la fraîcheur font de ce Classic un vin de gastronomie facile à marier avec de nombreux mets. Viandes grillées (agneau en particulier) et plats méditerranéens (gratin d’aubergine par exemple) conviennent particulièrement.

Tasting suggestions: The wine may be enjoyed now, but will benefit from being laid down for a few years (4 to 8 years) to develop its bouquet. It is best served at a temperature of around 18 °C.
