Tasting notes:

A very mellow bouquet dominated by floral (mainly white blossom) and dried fruit notes, almonds in particular. Well-rounded and fleshy on the palate, confirming these soft, sweet aromas and adding hints of smokiness that linger on a fresh, acidulous finish. Tasting suggestions:

This wine is best served at between 10 and 12 °C and should be aerated when young. It may be served with a variety of dishes – fish, shellfish, white meat and goat’s cheese – and also goes will with some Asian food.

Tasting notes: Initial aromas of mandarins, preserved lemons and verbena. Acidulous notes of passion fruit and grapefruit are added on the palate. A sensation of fullness and freshness supports the long-lasting aromas.

Serving suggestions: This Classic White makes an ideal aperitif and may also be enjoyed with spring vegetables, shellfish, grilled fish or goat’s cheese. Or why not try it with something more original, such as a chicken Tajine with preserved lemons or wok-fried vegetables.

Vin de Pays d’Oc

Soil: Clayey limestone Grape variety: Sauvignon Harvest: By hand, in crates, with sorting Harvest date: 9 - 10 September Vinification: Slow pressing - Racking - Fermentation in the tank Maturing: On the lees, in stainless steel tanks Alcoholic strength: 13.0 % vol. Packaging: 75 cl Bordeaux bottles

Tasting notes: Light white blossom aromas appear first of all, followed by lemon and preserved orange with hints of smoke. On the palate these are joined by acidulous aromas. The wine is full and fresh with a long finish and plenty of fleshiness. This vintage is rather special as malolactic fermentation took place on part of the wine. We also thought that it found a good balance quite quickly; we therefore bottled the wine earlier than usual, while it still had its primary aromas, which are always more to the fore at this stage.

Serving suggestions: This Classic White makes an ideal aperitif and also goes well with shellfish or grilled fish. You could also try something more original with tajines or woks.
